From the bustling kitchens of London to the halls of justice, my journey has been shaped by passion, resilience, and a deep desire to help others. Starting as a young chef, I worked alongside some of the world's most renowned names—Gordon Ramsay, Michel Roux, Pierre Garnier, and Martin Wishart—immersing myself in the discipline and creativity that define exceptional hospitality. At just 25, I took the helm of my own kitchen and earned a Michelin star becoming the youngest in Scotland to achieve this at the time—an achievement that marked the fulfilment of a lifelong dream.
But life had more in store. With the arrival of my daughter, I chose a new path: a law degree. Armed with legal expertise, I set out to champion justice for those in the hospitality industry—an industry I knew firsthand could be tough and unforgiving on its staff. My goal was to make a difference for those who, like me, had experienced the challenges and unfair treatment that too often go unseen.
A profound personal loss then reshaped my perspective entirely. Losing everything I had built forced me to recognise just how fragile life can be and how quickly circumstances can change. This experience deepened my empathy for others facing hardship—especially amid the rising cost of living and the everyday struggles so many face.

Director of Operations
Born in the UK and raised across the United States, I became deeply aware of the injustices the LGBTQ+ community face while living in the Southern US. Witnessing discrimination first-hand pushed me to look for practical ways to stand alongside my community and fight for meaningful change.
I went on to study environmental biology and built a career in environmental construction, working as both an engineer and project manager. That experience sharpened my skills in organisation, problem-solving and seeing complex projects through from idea to impact.
My wife and I later moved to Scotland with our two dogs, where I wanted to give back more directly to the community that has always been my home. My work at Rainbow Rights allows me to bring my analytical mindset and lived experience together to support LGBTQ+ people to understand their rights and feel empowered to use them.
Outside of volunteering, you’ll usually find me outdoors with the dogs, reading, or planning my next project in the garden. I’m passionate about building systems where no one has to choose between who they are and the safety, dignity, and opportunities they deserve.

Director of Business Development
Growing up in Minnesota and traveling across the United States, I witnessed the inequities of justice affecting people from all walks of life; from housing crises and limited access to healthcare to illegal deportations in my home state. Although I now live in Scotland, I carry with me the communities that shaped me: my family and friends, colleagues from the family-owned restaurant where I learned the foundations of business, my chosen LGBTQ+ family who supported me when I came out, coworkers who trusted me as I advanced up the corporate ladder, families reliant on fundraising for medical care, and neighbourhoods rebuilding after devastating hurricanes. These experiences continue to guide my commitment to community and justice in my work with Rainbow Rights.
With a background in restaurant management and experience in the telecom and media industry at a Fortune 500 company, I bring strong interpersonal skills, empathy, and a problem-solving mindset to my work. As a Korean American living in Scotland, I value diverse perspectives and remain committed to advocating for accessible justice for all.
In my spare time, I enjoy being with my wife and our two dogs, traveling, exploring new food, attending live music events, and listening to true crime podcasts.

Chief Security Officer
Bringing unparalleled expertise in surveillance, scent detection, and morale boosting. A highly trained beagle, she specialises in identifying potential threats such as unattended snacks, suspicious rustling noises, and any delivery driver within a 200-metre radius.
With a keen nose for detail and an unwavering commitment to perimeter checks (particularly around the kitchen), Rosie ensures that nothing escapes her attention. Her leadership style is firm but fair, though she is known to accept payment in treats and belly rubs. When not on active duty, she can be found conducting strategic napping operations or engaging in advanced tail-wagging diplomacy.

Chief Adventure Officer
Basil was born in 2019 and adopted by her two moms, quickly earning her place as chief adventure officer of the family. She has travelled all over the US for her mom’s work in construction, from the mountains of Colorado to the swamps of Louisiana, and now calls Scotland home with her moms and her brother.
Energetic and intelligent, Basil is half Border Collie and thrives on order, especially when it involves carefully sorting her toys into just the right places. Her ideal weekend includes a trip to the farmers’ market (bonus points if there are free snacks), a strategic chicken-chasing operation, and as many tennis balls as her humans can throw. Her biggest life goal is simple and unwavering: to finally make fetch happen.

Chief Floof Officer
Odin was born sometime in 2023 and started life as a very hungry puppy wandering a rural highway outside El Paso, Texas, where he was found and adopted by his two moms while they were there for work. Now serving proudly as the family’s Chief Floof Officer, he is a supermutt made up mostly of Husky, German Shepherd, and Malamute, and he lives up to every bit of that heritage—a glorious force of nature sometimes lovingly referred to as “the hurricane.”
He adores his big sister and, while he does not quite understand fetch, he loves sprinting joyful circles around the garden while she plays. Having traded the heat of Texas for the cooler weather of Scotland, Odin is thrilled to be fluffing around in a climate that finally matches his coat, making new friends and settling into his chosen homeland.
Odin’s favourite thing in the world is his family. Very pack-oriented, he is happiest in the middle of a big cuddle pile. If only his sister would sit still long enough. When his moms leave the house he gets a little stressed, but listening to Natalie Merchant helps him settle, and in 2025 he even ranked in the top 0.004% of Natalie Merchant listeners on Spotify, cementing his status as the household’s most devoted music fan.
